Job Description: 

What you will do:
Responsible for maintaining a high level of quality, food safety and service in support of restaurant locations and end customers. Manage vendor execution of food, packaging, and ingredient distribution and quality. Also responsible for manufacturer truck audits, store evaluations, and training functions. Responsibilities include identifying opportunities for continuous in-store training and performance.
 
  • Develop an in-store quality assurance program that supports brand initiatives and growth objectives.
  • Enhance quality assurance execution in procurement, sourcing, warehousing, distribution, deliveries, inventory management, and all in-store functions
  • Establish and maintain key performance indicators for stores that are in alignment with company goals and strategies and implement plans to improve supplier performance
  • Develop and periodically test a product recall process
  • Ensure the ability to track product sources
  • Support Supply Chain efforts in assuring safety of food supply
  • Develop strong working relationships within the culinary and R&D departments
  • Provide training to operations management on supply issues   
  • Ensure vendor adherence to Pei Wei product specifications
  • Manage Health Code ratings at the store level and conduct store audits that improve performance
  • Conduct annual manufacturer audits
  • Develop an onsite delivery truck audit system that assures product, temperature quality and compliance
  • Advise Supply Chain management on quality and food safety issues
  • Ensure ability to track product sources
  • Work with contractors and internal departments to create product “standards” to be used in the restaurants to evaluate product conformance
  • Update and track current nutritional / ingredient statements for all finished product sold in Pei Wei
  • Manage 3rd party contractors in conducting product evaluations based on risk and in compliance with set schedules
 
  • Job Requirements
  • What you need:
  • Education:
  • Bachelor’s Degree
  • ServSafe Certified or willingness to obtain in your first 90 days
 
  • Experience:
  • Minimum of 3 years Quality Assurance related experience
  • Extensive experience with food manufacturers and a working knowledge of food manufacturing and product development
  • Proven restaurant operations knowledge
  • Insight and understanding of food service distribution business model
  • Significant knowledge of food regulations
  • Current working knowledge of QA principles such as SOPS’s, USDA, OSHA, HACCP, Allergens, and Product Traceability

  • Position requires talking, hearing, walking, sedentary work, and visual acuity
  • Frequently required to lift objects weighing up to 40 pounds.

  • Travel up to 65% required
