Responsibilities:

  1. Responsible for applying advanced principles of food processing and science; designing, conducting, directing, and documenting experiments; collecting, analyzing, and interpreting data; and communicating results that will lead to improved and new innovative and creative applications in support of the company goals and objectives.
  2. Applies expertise in several key areas of food safety and process development and conducts research in multiple fields of the discipline.
  3. Conducts research projects focusing on salmonella reduction in Jennie-O’s Live Production and Plant Operations, focused on the latest techniques to detect and reduce salmonella in any phases of production from hatchery, growing operations, slaughter, cutting, and raw processing.
  4. Responsible for conducting preliminary research related to the project in scientific journals and literature, test protocol design and implementation, data analysis, and progress reports for the project. Maintain up-to-date knowledge and seek new innovations to help Jennie-O reduce the risks associated with Listeria monocytogenes in our ready-to-eat products.
  5. Responsible for working with the product development team to ensure Listeria monocytogenes intervention strategies are in place and validated for all ready to eat products that are at risk for being contaminated.
  6. Design and coordinate challenge studies as needed to validate the efficacy of the intervention strategy.
  7. Oversee the routine shelf life testing of products currently being produced in our various plants. This includes coordinating the product mix and frequency of testing for each of our production facilities.

Minimum Qualifications:

  • Master’s degree or equivalent in Microbiology, Food Safety, Food Science and Technology, or related field and 1 year of related experience
  • Must also have demonstrated ability with each of the following: 1. Designing and conducting scientific experiments on food; 2. Executing test protocols in a laboratory and pilot plant environment and collecting and analyzing data; 3. Writing test protocols and reports; and 4. Conducting microbiological testing of food samples
  • Experience may have been gained concurrently. Will accept experience gained before, during, or after Master’s program
